Vegan Avocado “Ice cream” Sandwiches 
Crusts:
2 cups raw walnuts
2 cups medjool dates (pitted)
1/2 cup raw cacao powder
Avocado “Ice-Cream”
2 ripe avocados
1/4 cup raw honey (if you are a “true” vegan and don’t eat honey you can sub stevia) 
1/4 cup raw cacao powder
2 tbsp virgin coconut oil
1 tbsp vanilla
pinch of pink himalayan sea salt
pinch of true cinnamon 
Method:
Process the ingredients for the crust until they are smooth. Use half of what was processed to line the bottom of a brownie tray. Make sure to presh it down firmly so that it doesn’t crumble apart later when you try to pick it up. Place the tray into the freezer to set. Put the other half of the crust mixture aside in another bowl. Process together the ingredients for the avocado “ice cream” until smooth. Remove the tray with the bottom layer of crust from the freezer and evenly spread the avocado mixture on top of it. When it is even let it sit in the freezer for another 10 minutes. Once it has solidified a bit you can spread the rest of the crust on-top. Allow to freeze for 45 minutes-1 hour before cutting/serving. 
These delicious treats are packed with vitamin e and essential fatty acids from the walnuts and avocado. Along with the raw cacao and coconut oil this makes them great for cardiovascular and neurological health. Dates are a great substitute for other sweeteners because their high fiber levels slow the release of glucose into your blood- this creates less of a spike in blood sugar.
